WINE MAKING

Our first vintage of wine was released at the Heathcote Wine & Food Festival in October 2008. Traditional hands-on wine making methods were used at every stage of the process. Low yields, hand picked, and hand plunged fruit in open fermenting vats allow the intense colours and flavour of the fruit to speak for itself.  Minimal intervention in the natural processes allows good fruit to become fine wine.

Whether you are a winery wanting to order several tonnes or a first time winemaker wanting a very small amount we can supply you premium grapes you need to make quality wine. DELIVERY INFORMATION

Delivery date to be notified one week prior.
Delivery may be on any day of the week; weekdays 6-10pm and weekends 9am-6pm.
Please advise if you are unavailable on any of these days.
Changes in delivery methods are in order to maintain the maximum fruit freshness as in previous years the heat was detrimental in the fruit's quality.
Wineries, contact us to negotiate a price on delivery.

 

Expected harvest in March 2009.  Regular updates on the progress of the crop and ripening will be posted on the growing notes.
Too busy to make your own wine.  We can supply bulk wine, primary fermentation finished in barrels or demijohns, ready for you to see through to the bottle.

2006 Cornella Ridge Heathcote Shiraz

Lots of interesting things to smell and taste - an intriguing nose of chocolate, mint and black fruit being the main ones (real or imagined). Sensitively oaked, it’s nice and dry on the palate with attractive soft tannins.  Just above medium bodied with good freshness and very drinkable, although not especially deep. It could easily take a bit of bottle age to gain further complexity. Very nice wine. Good value and authenticity.  Just 2250 bottles.

2006 Cornella Ridge Unfiltered Heathcote Shiraz  - Sorry sold out

Made from the same batch of 2006 grapes. Hands off winemaking, purity of fruit, unfined, unfiltered, the raw gem, the uncut version.
The wine has a dark colour with a slight purple tint.  Compared to its filtered sibling, this wine has strong tannins up front that soften and leave a taste of black fruits, chocolate with a touch of spice.  While this wine is on the big side, it is silky smooth like rich dark chocolate with a touch of spice. Finish is long and even.  You need to decant and let this one breathe. A very nice effort. Ridiculously small quantity; just 200 bottles.
